Long Overdue



A month after completion here is a snapshot of the kitchen. I really like how it turned out despite my master plan having a few more renovations in it. Turns out it doesn't pay to do all sorts of things when your putting the house for sale. Mostly I'm over the looking around wishing to do more things and I just want to get out of here! Anyways this is the view into the dining area with the new window, painted trim and newly painted walls. The lights, curtains and table were all from before.


I have to admit it does look rather nice and fresh in my opinion :)

Holey Shmoley

It's been awhile since I logged onto this blog and  life has changed. Mostly I've been busy trying to figure out life with Kristin, it's always an adjustment to get a new routine going! She's been an awesome little dolly. Nights have been good and I highly recommend having the husband home for the first week and a half (I know it's not super realistic, but it worked out for us this time) so catching up on sleep is not a problem.
Anytime I was tired I slept and I'm pretty sure that  is why it has hardly felt like there is a new baby here.

 In other news our house is for sale:) We haven't had much in the way of lookers but that's just perfectly fine with me. It would be nice to get rid of it however it pretty much stresses me out so if nothing happens until I move out that is a-okay. And speaking of moving we will be living in Williston for at least a year, probably two or three. At the moment it's kind of a wait and see how it goes type of thing.

She's arrived, and we sure are glad! We've been settling into life at home and are doing well. Once she decides to go to bed (which has been around 1:30 every night) she sleeps awesome. It actually works out well while Neal is home since I can sleep in..not to sure how it'll go when I don't have that option but I guess we'll find out:)

Nerves

All this sitting around waiting is starting to get to me.  I know it's normal but it seems I forget between babies how much of the day (and night!) is spent with at least half the brain focused on when will this labor start?! Three out of my other four were born at 39 weeks, so that gives me at least one more week..and I'm trying to be thankful and not too stressed because that means that Neal will be home. Which is really preferable to him NOT being here. Still though.

 To get me focused on other things, I've been trying to work on a few little projects. And I do mean little-I think yesterday I  filled in some nail holes and cleaned the shower head. While they did need to get done, it's laughable that this gave me a sense of accomplishment:) At least I could cross two items off my list. Last week Caitlin and my mom came and helped me paint the kitchen, and one of these days I should get a couple pictures up. Surprisingly I really like the color, and yay, just have one window left to paint. And then the counter tops need to get done so I can officially cross 'kitchen' off the list. Motivation is hard to come by lately which is rather unfortunate as Neal has set up an appointment with a realtor in two weeks. Eeps. If patterns hold true, after this baby comes I should be more energetic and whip out the last few things that need to get done. At least I've started the packing..18 rubbermaids and counting!

Cooking: Calzone

One of the kids favorite meals is a 'pizza roll'. The recipe I use is from the TRR (at least I think it was- a few years back maybe?) submitted by Mallie J.  Calzones are extremely easy to make as long as you remember to start the dough early enough as it has to rise.  Here's the recipe that I use, in my KitchenAid with the dough hook.

Dissolve: 2 packages dry yeast (or 4 1/2 tsp.) in
1/2 cup of warm water

Add: 1/3 cup shortening
4 T. sugar
2 tsp. salt
2 cups water
5-6 cups of flour (I often use 3c. Whole Wheat, 2c. white)

Mix well with dough hook, knead dough and then cover and let rise for 45-60 minutes. Divide dough in half (I always throw one half into a freezer bag and save for another time. Also you can use it for a pizza or breadsticks.) Roll dough into a pretty wide rectangular shape on a floured surface. Don't go to thin or your toppings will explode out the side when cooking. I know this from experience.

I dash a little bit of olive oil on the crust, spreading very thin and then sprinkle liberally with seasoning.

This time I used pepper, garlic, parsley and italian seasonings. Just whatever I've got on hand. After the spices you add toppings. We usually go pretty basic with pepperoni



and mozzarella. Isn't my helper cute?


Roll the calzone up loaf style, starting with the long side.



Rolling, rolling, rolling. Then tuck the edges under and place on a greased jelly roll pan. I always end up curving mine since it's to long.


Here it is all ready to pop into the oven. Bake at 375 for  30-40 minutes. It should be a nice golden brown when it's done.  Now you're all ready to slice it up and dip into your favorite pizza or spaghetti sauce. Enjoy:)

It's Progress

Wow this month has been flying by..and dragging too! A few weeks ago I was feeling absolutely ready to have this little girl, but now that I'm down to 3 weeks it almost feels to soon.  The difference is that my 'nesting' has completely dropped down to zero and I've been super lazy lately. Thank goodness today I woke up and was ready to get a few things done. So here is the only little bit of progress around here:


 Curtains for the boys room are done:) I know I need to spray paint the rod they are on, and that is next on the list. I've got some cans of dark blue hanging around and plan to paint R's bed with them as well as the rods. I think all the aspects of their room are finally coming together after we hit up the first garage sale around here. It was well worth it- I got some painted canvas' for their wall, some cute train hooks and a few other small things. Once the 26 nails on the wall get pulled, and N pounds some that are in a straight line I'll get the rest of the room pics up.
